NaMoleon and bread

In the Easter holiday don't really have much to do, so just keep practising to make bread and cake.

At this moment I'm just following what the recipe say and never try to miss a thing. But the recipe not really explains very detail, it doesn't say that how we knead into elastic, it doesn't say that how stiff after we whisk the egg white, it doesn't say why we need to form into dough again after it rises, it doesn't say the humidity during baking. Although there has that much of uncertainity, we still can overcome and make a okay result. It is all about brain.
